You have probably caught on by now, that I love to cook. And even more than just cooking, I love trying new recipes. Sure I have favorite foods and veggies and dishes, but I always seek out a new recipe. It’s actually rare for me to cook a meal more than once.
And I LOVE when some of my favorite ingredients come together to make a dish.
Black Beans (love ‘em) + Quinoa (can’t go wrong) + cumin (one of my fave spices). I mean seriously, does it get any better than this?
Yes, it does get better.
This dish can be prepared in no time. So for all you “I don’t have enough time to make food” or “I am so busy I can’t stop for lunch”, your excuses are no good here. Leave ‘em at the door.
Black Bean and Quinoa Salad with Cumin Dressing
1 cup dry quinoa, rinsed
1/2 large cucumber, diced neatly
1 small bell pepper, diced neatly
1 can BPA free, organic black beans
10-15 basil leaves, chopped into a chiffonade
1/4 cup fresh cilantro, chopped
Ingredients – Dressing
2 tbsp extra virgin olive oil
1/4 cup apple cider vinegar
1 tbsp agave or maple syrup
1 tbsp dijon mustard
1 tsp cumin
Salt and pepper to taste
1. Cook the quinoa.
2. Chop the veggies
3. Make the dressing.
4. Mix and enjoy.
