What does a health coach eat?

My gorgeous breakfast!

I  told ya last week that we’re getting personal and I wasn’t kidding. How much more personal can I get besides grabbing a camera and following myself into the kitchen?  This week we’re going to talk about a typical day in my life around food – what I eat for breakie, lunch and dinner. And yup, I’m going to share with you my snack situation as it happens as well. Nope, this isn’t me mugging for the camera, although that might just happen.

For the most part, I eat really (really) well. I’m on a first name basis with green smoothies, kale, quinoa, chia, flax and hemp seeds. My boyfriend and I cook 98% of our meals. And we have minimal pre-made stuff in the house.

Yup, I most definitely talk the talk AND walk the walk. So c’mon over and visit with me in our kitchen.

    Today I had a slice of pumpkin bread with butter for breakfast, a BP&J (No sugar jelly) and apple for lunch and tonight it will be chicken in chipotle sauce with sweet potato fries (Homemade), rice and string beans. (Mother-in-law made most of this, I just have the left over’s).

    The apple sausage is great. I have been eating that for sometime.

      That apple sausage is addictive! Ever since I discovered it, James and I love it – we just can’t get enough. Have you tried the other flavors? Yummy pumpkin bread! :) Johanna

    Hi Jo – how many calories do you think are in the breakfast? Do you have a ballpark of calories per day that you shoot for? Balance between protein/carbs/fat? Thanks! :)

      Alyssa – I have to tell you that I don’t have a ballpark of calories that I eat everyday. I actually don’t have a clue, nor can I tell you what’s in the breakfast (esp as it was a hodge podge!) I make my food decisions, more on knowing what’s good for me, what sits well in my stomach and knowing how my body responds to different food things. I also try and be aware of eating differently based on my workout needs. I can tell you that I always make sure that my dishes are made up of about 30% protein, 45-50% cars and then 20-25% fats. I do notice that when dishes are lacking fats and protein, I’m still hungry! I can also tell you that with that breakfast or a hearty breakfast like that, I won’t be hungry again til around 1 or 2pm. Hope that helps!
