How to Roast Vegetables

How to Roast Vegetables Brussel sprouts. Sweet Potatoes. Squash. Carrots. Parsnips. Peppers.

There are so many ways to cook and prepare these vegetables (and more!) But my favorite has to be roasting them. And the veggies must absolutely love being in the oven. It's such a healthy way to eat vegetables and for me, it's a surefire way of having something dee-lish on my plate. I've heard of someone moon-lighting as the vegetables, writing a love letter to the oven.

“Dear Oven: How we love thee. You coax the sweetness from our earthly forms, you transform our color into golden bites of caramel.”

Roasting vegetables is also very seasonal (unless of course you live down under.) And to me, nothing beats pulling some vegetables out of the oven, the warmth rising up on my face. I can see how my squash or brussel sprouts have caramelized while they were doing their thang in the oven. They have a bit of a crisp on them whose sweetness just melts on my tongue.
