As I've shared before in previous posts, there are some things that religiously happen in my home every Sunday.
Because I do those things without fail every week AND because of a few things I always have handy, it's really easy for me to make meals in a pinch....If for some reason, my meal planning was off or I'm just not in the mood for whatever I've planned. Or I'm just ravenous!
Let me share with you what I do and how that's possible.
Here's what's always in my fridge and pantry, ready to go at moment's notice :
- Greens. I usually buy the plastic container which is a mix of baby kale, chard and spinach
- Eggs - hard boiled and raw
- Roasted veggies
- Tins of black beans and chickpeas
- Field Roast Vegan Sausage
- Accoutrements : raisins, pumpkin seeds, dates, hemp seeds
- Cooked quinoa
I've always got those items above at my fingertips which is what truly allows me to make meals in a pinch. Figure out what your go-to items always are.
Then here's how I mix and match:
Meal option #1 : Greens + some black beans + roasted veggies + avocado
Meal option #2 : Quinoa, roasted veggies + hard boiled egg
Meal option #3 : Greens, field roast sausage, 1/2 chopped apple + accoutrements
Meal option #4 : Beans, roasted veggies, 1/2 c quinoa + accoutrements
Meal option #5 : Greens + beans + fried egg + avocado
Meal option #6 : 1/2 of last night's leftovers + roasted veggies + poached egg
The options are truly endless. And as I eluded to with meal #6, taking 1/2 of your leftovers and swapping in new veggies, or a new grain or adding an egg or some of what I like to call my accoutrements, makes for a new meal with a snap of your fingers.
Swap in a new bean for a new meal. Instead of having a hard boiled egg, eat a poached one instead.
Bored of spinach? Try baby kale. Add seeds and my accoutrements for more texture, variety, flavor and nutrition.
