It all began with a mason jar. And a busy Thursday morning. I've started working out with a trainer again (my quads and abs aren't too thrilled about that.) Monday and Thursday morning at 7:30am you'll find me at the gym, grunting it out between kettlebell swings, box jumps and an insane ab routine.

If you know anything about me, you know I love chickpeas, leafy greens, morning workouts and breakfast.

Something needs to be in my belly before I workout.....and of course after I workout  as well (isn't that why we workout? Because it justifies second breakfast?!)

Since I pack a lot into the first few hours of my day, I ain't got no time for things that slow me down.  No time for things like breakfast prep.

Enter the mason jar on stage right.

Last week I made two jars of overnight oats and what a lifesaver they were. Not only did they both take  3 minutes to prep the night before, but I was thanking my lucky stars the next morning for having my act together. (For once...)

Similar to smoothies, there's no real wrong way to make overnight oats. It really comes down to taste and texture preference.

Oh, and a mason jar.

Johanna's Overnight Oats

1/3 cup of coconut yogurt (the unsweetened one) 1/3 cup of coconut (or any non-dairy milk) 1/3 cup of gluten free rolled oats (not the quick oats) a few berries 2 tbl hemp seeds tbl of chia seeds

Put all the ingredients into a mason jar and place in the fridge.

The next morning when I grabbed the jar, I added a tbl or so of peanut butter and some raisins and nuts. Just because. Enjoy it as you want, but just enjoy it! And all your free time in the morning.
