Socca : A Gluten Free Flatbread

SoccaIf you've been following me for awhile now, you've probably caught onto a couple things about how I cook. 1. I'm a big, no, HUGE fan of recipes that are easy, meaning they don't take a lot of time AND I have all the ingredients on hand.

2. I love trying new recipes (so long as they are easy. See above.)

3. I love being pleasantly surprised by new recipes, meaning the recipe was easy and whatever I intended to make tastes pretty darn good.

Socca, a gluten free, vegan flatbread made with chickpea flour, blows my mind.

Why?

Socca is remarkably easy to make.  At a minimum, there are just three ingredients necessary - Chickpea flour , salt and water. That's it!

Think of socca like a gluten free, vegan pancake. You can top it with whatever want and it's super versatile. For example you can put jam + berries on top and eat it like toast. You can drizzle syrup on it and eat it like a pancake. You can use it as a pizza base. You can toast it and eat it like pita chips in a dip. You can broil it, make it all crispy and then serve it as an appetizer at your Super Bowl Party. (Damn Patriots.)

The possibilities are endless.

All you need to make socca is equal parts water + chickpea flour and a pinch of salt. You can use more water to make a thinner or less water to make it thicker. You can also add minced herbs or a few pinches of spices to the batter for some extra pizzazz. Then cook it up as you would a pancake.
