So we can all be on the same page, I am not a baker. I don't bake. Not cookies. Not casseroles. I really only use the oven for roasting. In general, I'm more of a stove-kinda gal. I don't really eat a lot of cookies, or pies or baked-type items.
Until I saw this Trader Joe's Gluten Free Oatmeal Cookie Recipe. It just spoke to me.
For some reason, I had the Trader Joe's Gluten Free Rolled Oats Bag in my hand (that makes me think that it was breakfast time, but apparently not if I made cookies. Hmmm.)
So I can't recall exactly what time of the day it was when I felt a calling to make these cookies. I do remember that my boo was coming home from a day of climbing. And being that he's a lover of most baked items (okay, all baked items), cookies seemed to be a great way to say "welcome home."
And if you have been following me for awhile, you know that I am often swayed by recipes that I have a) never tried before b) if I have all the ingredients and c) if it's eeee-zee pee-zee.
Check. Check. And check. I was all in on these Trader Joes Gluten Free Oatmeal Cookies.
Gluten Free Oatmeal Cookie Recipe Ingredients 1/4 c butter (I used Earth Balance) 1 1/4 tsp baking soda 3/4 c sugar 3 cups Trader Joe's Rolled Oats 3/4 c brown sugar 6 oz chocolate chips 2 eggs 1/2 c of sunflower seeds 1 tsp vanilla 1 c peanut butter
1. Preheat over to 350 F 2. Combine sugar, brown sugar and butter. Beat til creamy.
3. Add eggs, baking soda and vanilla and mix well. Add peanut butter and mix. 4. Stir in oats and chocolate chips and seeds. Place teaspoon of dough on lightly greased sheet about two inches apart.
5. Bake 10-12 minutes until lightly brown on edges.
