tropical banana and pineapple kale salad with creamy coconut lime banana dressing

This might just be the longest title ever on a blog post that I have written. Just writing it makes my mouth water as I recall this dish. Oh my. It was just that good.... Okay, so it's got kale in it. Which makes it a winner in my book. And it has banana. And coconut milk. And possibly mango although my version didn't. So yeah. It's kinda like a pina colada on kale.

I mean. For realz. Does it get any better than that?! A pina colada. On kale. Yum yum.

But seriously though, kale is the new black. I swear. Any time that I am out talking about food, which may or may not happen quite frequently, kale inevitably comes up.  Always. People are either new to kale and super enthusiastic about trying new kale recipes Or they already love it and are willing to share their go-to kale recipes.

I place myself in both categories.  I am most definitely super enthusiastic about trying new recipes, kale themed or not. And I love sharing my go-to kale recipes. One of which you can find here.

To date, all my kale recipes involved baking it somehow. Until now. This is a straight up raw kale recipe. With a pina colada on it. So as we enter the warmer months (these warm temps are here to stay....right?!?!?!) you can divorce your oven and still get your kale fix.

Tropical Banana and Kale Salad with Creamy Coconut Lime Banana Dressing Ingredients - dressing 1 c chopped fresh pineapple 1/4 c fresh lime juice 3/4 c coconut milk 1 tbsp coconut oil, melted 1 tbsp chia seeds

Ingredients - salad 5 cups packed kale, stems removed and roughly torn 1 ripe mango, chopped 1/2 large banana, chopped 1/2 cup fresh pineapple, chopped 1 tbsp shredded dried coconut 1/4 cup roughly chopped macadamia nuts


1. In a blender, blend all dressing ingredients until smooth. 2. Meanwhile, prepare the kale and add about 2/3 of the dressing to the kale and massage it in with your fingers. While it marinates, chop the fruit. 3. Mix everything together, top with coconut and mac nuts, and serve.
